Air fry on a range is convection cooking with a high fan speed and a rack that lets air reach the underside of the food. It is genuinely useful, and it is also the feature people are most often disappointed by, usually because it is being used like a bake cycle.
What Changes the Result Most
- Use a single layer. Crowding is the number one reason food steams instead of crisping. Two smaller batches beat one heaped tray every time.
- Use the right pan. Air has to reach underneath, so a perforated tray or a proper air-fry rack over a sheet pan matters. A solid deep dish defeats the mode entirely.
- Do not line the whole rack with foil. Blocking airflow does the same damage as crowding, and covering the oven floor can cause uneven heating.
- Add a little oil to fresh, uncoated food. Frozen items that already carry oil often need none.
- Preheat if your manual says to, and follow the rack position it specifies; air-fry performance is sensitive to position.
- Turn or shake partway through. Even with a fan, the food facing the airflow browns first.
Converting Recipes
Countertop air fryer recipes rarely transfer unchanged, because the cavity is far smaller and the air moves differently. Start with the times in your GE manual, and check food early. For regular convection baking, the usual guidance is to reduce the conventional temperature by around 25°F and to expect shorter times, but follow whatever your specific manual recommends.
Smoke and Smell
Some smoke on high-fat foods is normal, since the fan drives it around the cavity. Make sure the hood is running. If smoking is heavy, it is usually residue on the oven floor or rack from previous cooking rather than the current food, and cleaning between uses solves it. Persistent smoke from a clean cavity is worth mentioning to a technician.
Two Symptoms That Are Not Technique
- The fan does not run during a convection or air-fry cycle. That is the defining feature of the mode, and without it the oven is just baking.
- Grinding, scraping or rattling from the fan. A convection fan motor or blade that has failed changes both the noise and the result.
An oven that browns severely unevenly in every mode, not just air fry, also points at the appliance rather than the method. Book a GE range repair if the fan is silent during a convection cycle, since that narrows the diagnosis to the fan, its wiring or the control before anyone arrives.
